Choose any two of your favorite recipes in the meat, poultry, or seafood and fish group. Add
your own creative touch to these recipes. Describe the modifications you made to each
recipe—change of ingredients, cooking method, etc.
Write a short list of the tools, equipment, utensils, and appliances that you’ll need to make
these dishes. Then, select two pieces of equipment from your list and describe how you
would use and maintain them. Finally, include a presentation of up to five slides to introduce
your restaurant and the recipes.
